ARTFRITI love artichokes.  However, I will admit that I am totally intimidated by them.  I order them whenever I see them on a menu at a restaurant but steer clear of them at the market as I am scared that I won’t be able to cook them well.

I am looking to get over this problem and I am thinking some time in the near future I will buy some fresh artichokes and do some of my infamous fearless experimentation.  In the meantime, I look to get my artichoke fix at home by using some of the prepared artichoke hearts I have on the shelf and I think I found the perfect recipe to try…

this Artichoke Frittata recipe I found in a recent issue of Good Housekeeping magazine.

About the Artichoke Frittata recipe from Good Housekeeping: “An open-faced omelet packed with tangy feta, artichokes, and other veggies makes a colorful, satisfying main dish for breakfast, lunch, or dinner!”

OK, forget the artichokes, this recipe had me at feta!  This may be the perfect recipe to try on a lazy Memorial Day morning.
