EQSIt is salad season and I am continually looking for something new and different than the old favorites. I found a great new idea for a summer salad in the pages of Better Homes and Gardens magazine. Yes, I said Better Homes and Gardens.

The recipe I found is for an Edamame Quinoa Salad which is just a great idea. I love me some edamame and I am on the quinoa bandwagon, so yeah, this salad is perfect.

Not only is this Edamame Quinoa Salad a delicious meal, it is super easy to make. Short of preparing the quinoa, it is really all about assembling as stated in the recipe itself: “meanwhile, in a large bowl combine the edamame, corn, cherry tomatoes, and cilantro. Add quinoa; toss to combine. Add lime juice and olive oil; toss to coat. Season to taste with salt and pepper.”
