About the Eye of the Goat Bean from Elegant Beans: “Eye of the Goat, aka Ojo De Cabra, is an heirloom bean from Mexico. It is a small gray bean with a dark strip which gives it the name “Goats Eye” and is a favorite in Baja California. It has a great flavor which is sweet with a smooth texture and can be served as a dish by itself. It is also good in a pot of beans, stews and soups or chilled for salads.”
