fritThis is the weekend I used to hold an annual brunch for my friends when I lived in Boston’s tony Back Bay and trendy South End. I now live on the prairie in Kansas (just across the Missouri River from the great American city of Kansas City, MO) and do not have that brunch anymore but I have plenty of vegetables and eggs and can still have a brunch all by myself.

All of this is just a set-up for the great recipe for a Spring Vegetable Frittata I found in Real Simple magazine – which would be the perfect dish for any brunch.

From the recipe for Spring Vegetable Frittata from Real Simple: “Whisk together the eggs, 1 teaspoon 
of the salt, and ½ teaspoon of the pepper. Pour over the vegetables in the skillet and cook, stirring gently, until the eggs just begin to set, about 1 minute. Sprinkle with the goat cheese and transfer the pan to the oven. Bake until the center is set, 10 to 12 minutes.”

Mmm, goat cheese!
