corncI found this recipe over the summer but just getting around to posting about it – a recipe for Corn Cakes with Blueberry-Tomatillo Salsa Recipe created by Nikki Dinki for Oprah’s O magazine. It calls for some farm fresh produce that is abundant in the summer, but you might still be lucky to find at your local farmer’s market.

From the recipe for Corn Cakes with Blueberry-Tomatillo Salsa Recipe from O Magazine:

“To make corn cakes: In a large bowl, whisk together flour, salt, baking powder, paprika, and pepper. Add corn, cheddar, and scallions, and mix well to coat. Add eggs and stir until just combined. Using damp hands and about 1/3 cup corn mixture for each cake, firmly pack together 8 (3″-wide) patties.”
